Those sounds you hear in the distance are huge sighs of relief from the residents of Mayfair, Chelsea and other posh districts of London after the Secretariat of the Convention on International Trade in Endangered Species (CITES) announced that exports of caviar from the Caspian Sea are set to resume in 2007. There is still considerable and justifiable worry amongst well-to-do gourmands as there has still been no decision yet on the crème de la crème of the delicacy, Beluga.
